Celebrating Black History Month Through Food

Nutrition and behavioral change expert Dr. Elizabeth Madison is here with some healthy and delicious dishes to serve during Black History Month.

In honor of Black History Month, nutritionist Dr. Elizabeth Madison, RDN, shared healthy, flavorful twists on classic soul food favorites in a recent News 12 segment. Her dishes demonstrated how tradition can go hand in hand with nutrition.

These are the same kinds of recipes Elizabeth brings into Samaritan Daytop Foundation’s Food As Medicine program. Through cooking demonstrations and nutrition workshops, people experiencing substance use disorder are learning how healthy eating can support their recovery journeys. With this education, participants are building skills that support physical health, emotional well-being, and long-term recovery.

The program is funded by Anthem Blue Cross and Blue Shield Foundation.
